  • lemon - 0.5 pcs.

Stages of the culinary process:

  1. We start by kneading the dough. Sift the flour, mix with baking powder and pour into a container or on the table.
  2. We take the butter (butter) out of the cold and chop it using a knife or grater. Add to the flour and immediately, while the butter is frozen, grind into crumbs.
  3. Add sour cream and knead the dough. It should turn out soft and plastic. We form the dough into a flat cake and put it in the refrigerator for a couple of hours so that the dough cools and “rests.”
  4. The apples need to be peeled and cut into thin pieces; the thinner, the more layered the filling will be. To chop the apple, you can use special devices such as a chip grater. Or use a potato peeler. Be sure to pour squeezed lemon juice over the chopped apples to keep them light and to add acidity.
  5. We choose a baking pan that is wide, but not deep, so that the sour cream filling can bake thoroughly. Grease the entire surface of the mold with the sides, sprinkle with flour so that the cake immediately leaves the mold.
  6. Cream filling is made by combining and thoroughly beating all ingredients (sour cream, egg, sugar, flour).
  7. Take the cooled dough out of the refrigerator, knead it and roll it out evenly and thinly, cover the surface of the mold and its sides.
  8. Place thin apple slices on the dough.
  9. Pour sour cream on top of the apples.
  10. Place the mold in an oven preheated to 180°C and leave for 50 minutes.
  11. Take out the finished pie and let it cool.

The classic composition of Tsvetaevsky pie can be varied by adding berries and fruits to the filling. For example, cherries in sour cream will give baked goods a rich taste and aroma.

For baking you will need:

  • baking powder – 1 teaspoon

Prepare for sour cream filling:

  • egg (chicken) – 1 piece;
  • granulated sugar – 1 cup;
  • wheat flour premium quality – 2 tbsp. spoons
  • 200 – 250 gr. cherries with pits removed

Step-by-step preparation of dessert:

  1. In a plate, a deep one will be more convenient, or on the table, pour flour, sifted in advance, add baking powder.
  2. Combine sour cream, melted butter, sugar with flour, kneading into a soft, silky dough. We hide it in the cold for 0.5 hours.
  3. Roll out a thin, uniform layer. Place it in a pan coated with oil so that the dough covers the sides.
  4. Place the cherry mass, with the pits removed, on the dough as the bottom layer.
  5. To prepare the filling, mix all the ingredients and mix thoroughly with a whisk or blender.
  6. Spread the pie filling over the cherries.
  7. Set the oven temperature at 180°C and bake the contents of the mold for 50 minutes.
  8. Allow the finished pie to cool and serve.

Tsvetaevsky pie with cottage cheese

Adding cottage cheese to the filling gives the finished Tsvetaeva-style pie a soft milky taste and grainy consistency. It is not difficult to prepare and will take about 1.5 hours.

For baking you will need:

  • premium wheat flour – 1.5 cups or 300 g;
  • sour cream (20% fat) – 4 tbsp. spoons;
  • granulated sugar – 0.5 cups or 100 g;
  • butter (72.5%) – 150 g;
  • baking powder – 1 teaspoon

For the curd and sour cream filling, prepare:

  • sour cream (20% fat) – 1 cup or 200 g;
  • cottage cheese – 200 gr;
  • egg (chicken) – 1 piece;
  • granulated sugar – 1 cup;
  • apples (sweet and sour variety) - 4 pcs;
  • 0.5 lemon

The cooking process includes the following steps:

  1. Add sour cream, sugar, baking powder and melted butter (butter) to the pre-sifted flour.
  2. When kneading, you should get an elastic dough. We form it into a cake and hide it in a cool place for 0.5 hours.
  3. To fill, you will need fresh cottage cheese, which must be rubbed until smooth through a sieve.
  4. Combine the curd mass with the rest of the ingredients needed for the filling and mix thoroughly.
  5. Wash the apples, peel them and chop into thin pieces. Pour lemon juice to add some acidity to the apples and preserve their original color.
  6. Roll out the chilled dough into an even layer and place it, gripping the sides of the baking pan.
  7. Place thinly sliced ​​apples on the bottom layer.
  8. Pour the prepared curd cream over the apple slices.
  9. Place the mold in a preheated oven (180°C) and bake for 50 minutes.

Tsvetaevsky pie with pears

Fruit notes will sparkle in a new way in the Tsvetaevsky pie if you add a sweet, juicy pear. To prepare this delicious dessert you will need the following products:

For baking you will need:

  • premium wheat flour – 0.5 kg;
  • sour cream (15 - 20% fat) - 200 g;
  • baking powder – 10 g

For a gentle filling prepare:

  • sour cream (15 - 20% fat) - 1 glass or 200 g;
  • chicken egg – 1 piece;
  • granulated sugar – 100 g;
  • premium wheat flour – 50 g

For the filling, choose juicy, ripe pears, for example “Conference” - 4 pcs.

Cooking steps:

  1. Knead into a plastic, soft dough. Combine the pre-sifted flour with baking powder, melted butter, granulated sugar, sour cream and knead well. Form the finished dough into a flat cake and hide it in a cool place for half an hour.
  2. To obtain sour cream filling, you need to combine all the ingredients (egg, sour cream, granulated sugar, flour) and beat thoroughly.
  3. Wash and dry the pears. Cut into small pieces.

  • 150 ml sour cream
  • 100 g sugar
  • 1.5-2 tbsp. tablespoons potato starch (or 2 heaped tablespoons of premium wheat flour)
  • 1 packet vanilla sugar (optional)

  1. Leave the butter in a warm place until it becomes soft. Get the rest of the products we need.

  2. Wash the cherries and remove the pits (I do this with the back of a teaspoon).

  3. Make the dough. Add 100 ml of sour cream, 50 g of sugar to the soft butter, and maybe a pinch of salt to enhance the taste.

  4. Mix everything into a homogeneous mass. Add flour mixed with baking powder and knead into a soft dough.

    Advice: If you prepare the filling with 1.5 tbsp. spoons of starch, after baking it will drain a little. Therefore, if you want to get a denser pie consistency (as in the photo), then you need to put 2 tbsp. spoons of starch. But we prefer the option when the filling is slightly liquid, it turns out like a cream. Lately I’ve been making it with flour (I add 2 tbsp), then it’s even more tender.

    You can also use half and half sour cream with cream, as in the recipe.

  8. Place the cherries on the dough, and it’s best to take them by hand, piece by piece, so that the juice remains in the plate (you can just drink it, we won’t need it).

Preparation:

  1. Sift flour (1.2 cups), add soda, vanillin and two tablespoons of sugar.
  2. Cut the butter into pieces and add to the flour.
  3. Using your hands, rub the flour and butter into crumbs, gather them into a mound and make a depression. Place half a glass of sour cream in it.
  4. Mix the dough and put it in the refrigerator for half an hour.
  5. Grind the egg with sugar. Add flour and sour cream. Stir.

Most often, Tsvetaeva pie is made with apples. Today I offer you not a classic version, but one of my favorites - with black currants.

You can use other berries for this pie. But the best ones are the sour ones. That's why another favorite of mine is cherries as a filling.

Well, I won’t change the rest - shortbread dough and sweet sour cream filling, because this is Tsvetaeva’s pie! 😉

Ingredients:

For the test:

  • premium wheat flour - 3 tbsp.
  • butter - 200 g
  • sour cream - 0.5 tbsp.
  • salt - 0.5 tsp.
  • soda - 0.5 tsp.
  • starch - 1 tsp.

For filling:

  • black currant - 250 g
  • sugar - 25 g

For filling:

  • sour cream - 1 tbsp.
  • eggs - 2 pcs.
  • sugar - 100 g
  • premium wheat flour - 5 tbsp.
  • salt - a pinch

Preparation:

I made this pie from frozen currants, freeing up the supplies in my freezer... You can also bake with fresh ones, fortunately now is the time for this!

So, I soaked my currants in cold water so that they would thaw a little before using them.

After that I started testing.
First, I sifted 2.5 cups of flour mixed with starch and soda. Added salt. I mixed everything.

Separately, I will say that I did not add sugar to the dough. It seems to me that there is enough of it in the sour cream filling (although there is also less of it there than usual, because I always reduce its amount in comparison with standard recipes!)
You can also add sugar to taste at the stage of mixing flour with baking powder and salt.

I put out the sour cream.
I took, as usual, 15% fat.

Melt the butter and let it cool slightly.

Added to the rest of the ingredients.

During the kneading process, I added another 0.5 cups of sifted flour.

I distributed the dough into a mold greased with vegetable oil, making sides.

I placed berries on the dough. Before this, I drained the water and removed the usual debris for currants - small twigs and leaves.

I sprinkled the currants with sugar, since the berry itself is sour. Although, in my case, the variety is quite sweet!
If your berries are very sour, you can increase the amount of sugar.

To prepare the filling, I combined eggs with salt and sugar (the amount can again be increased if desired).

I added sour cream, also 15 percent.

Stir the filling thoroughly so that there are no lumps.

Covered the berries with a sweet sour cream mixture.

I put it in an oven preheated to 180"C to bake for exactly an hour!

This Tsvetaeva pie turned out tastier than I expected!
Even those who don’t particularly like shortbread dough appreciated it! ;)
