  • half a liter of sour milk;
  • eggs - two;
  • flour - 160 grams;
  • sugar and salt;
  • soda;
  • sunflower oil.

  • 2 liters of sour milk;
  • 3 eggs;
  • a pinch of salt.

Pour milk into the multicooker bowl. In a separate bowl, beat the eggs with a whisk into a thick foam. Then pour the whipped mixture into the milk, add salt and mix thoroughly.

Set the multicooker to the “Stewing” or “Baking” mode for 20 minutes. It is necessary to wait until the whey is completely separated and curd forms at the bottom. Then you need to take a colander, line the bottom with two layers of gauze and throw the resulting cottage cheese onto it.

Wrap the mixture in gauze and place under a press for several hours. After this, pour cold water into the pan and dissolve the salt in it. Place the compressed cheese in water and leave to soak for a couple of hours. After this, the homemade cheese will be completely ready.

Tomato salad

Ingredients:

  • 150 ml sour milk;
  • 120 grams of small fresh tomatoes;
  • 20 grams of horseradish;
  • lettuce leaves and parsley.

Place lettuce leaves on the bottom of the plate. Cut the tomatoes into halves and place on top of the salad. Grate the horseradish on a fine grater and combine with whipped sour milk. Salt the tomatoes, pour the dressing over them and sprinkle with chopped parsley.

Tarator

This unique recipe for cold soup based on sour milk is a classic dish of national Bulgarian cuisine.

For preparation you will need:

  • 0.5 liters of sour milk;
  • 2-3 fresh cucumbers;

Dilute the sour milk slightly with boiled water and beat. If the milk does not taste sour enough, you can add a few drops of wine vinegar to it.

The frothed milk should be very cold; you can add ice cubes to it.

Cut the cucumbers into small cubes. Chop the garlic and dill and add to the cucumbers. Sprinkle everything with salt and pepper and mix thoroughly. After this, you need to leave the dish for 10 minutes so that the cucumbers release their juice. Then add olive oil and stir again.

Pour the resulting mass with cold milk, sprinkle with a mixture of dill and walnuts, and serve.

Potato soup with leeks

To prepare 4 servings of soup you will need:

  • 400 grams of potatoes;
  • 100 grams of leeks;
  • 2 eggs;
  • 30 grams of butter;
  • 100 ml sour milk;
  • 700 ml water;
  • salt and black pepper to taste.

Boil the eggs hard and set aside.

Place chopped leeks in a pan of salted water and boil for 5 minutes. Then add diced potatoes and black pepper to it. When the potatoes are ready, season the soup with butter and turn off the stove.

When serving, place half an egg on each plate and add sour milk.

Sour sauce

One of the simplest recipes made from sour milk is pancakes.

In order for the pancakes to turn out airy with an openwork pattern, you need to add baking powder to the dough.

To prepare thin pancakes for 3-4 servings you will need:

  • 0.5 liters of sour milk;
  • 1 chicken egg;
  • a glass of flour;
  • 2 tablespoons sugar;
  • 1 teaspoon vanilla sugar;
  • a pinch of salt;
  • 1 tablespoon vegetable oil;
  • 0.5 teaspoon baking powder;
  • butter (to taste).

First you need to beat the egg with sugar, salt and vanilla sugar. Then add half the amount of milk according to the recipe. Next, slowly add flour and baking powder, thoroughly stirring the mixture until a homogeneous consistency is obtained. Pour in the rest of the milk and add vegetable oil. Mix everything thoroughly.

Heat the frying pan well and grease its bottom with lard or oil. In order for the pancakes to be thin, you should pour the dough in small portions each time, half a medium-sized ladle or less.

Fry the pancakes until golden brown on each side. Do not pour too much oil into the pan, otherwise the pancakes will be too greasy. After frying, already on the plate the pancakes can be greased with butter.

You can make flavorful pancakes from sour milk. This recipe is one of the simplest, which will help out in any situation.

To prepare pancakes for a family of 4 people you will need:

  • 0.5 liters of sour milk;
  • 2 chicken eggs;
  • a glass of wheat flour;
  • 3-4 teaspoons sugar;
  • 1/3 teaspoon salt;
  • 0.5 teaspoon of soda;
  • 2 tablespoons of sunflower oil for dough, as well as oil for frying.

To the sifted flour you need to add soda, salt, previously beaten together granulated sugar and eggs. Stirring continuously, pour in the sour milk. It is better to start beating the mixture with a mixer at low speed, gradually increasing it. At the very end, add sunflower oil, mix and let the dough stand for 10 minutes, waiting for the soda to react.

After this you can start frying. The frying pan must be well heated. Place the dough in hot oil, frying the pancakes on each side for 2-3 minutes. Serve with sour cream or jam.

Ingredients:

  • 1 glass of sour milk;
  • 2 eggs;
  • 1 teaspoon of soda;
  • a pinch of salt;
  • flour.

Beat eggs with salt with a fork, add sour milk and soda to them. Then, gradually stirring, add flour until the dough holds its shape.

Roll out the finished dough thinly and cut circles out of it using a mold. You can use them to make dumplings with any filling.

Buns with poppy seeds

To prepare 10-15 servings you need to take:

  • 0.5 liters of sour milk;
  • 2 tablespoons of pressed yeast;
  • 8 tablespoons granulated sugar;
  • 3 chicken eggs;
  • a pinch of vanilla sugar;
  • 50 grams of butter;
  • 1 kg flour;
  • 1 tablespoon salt;
  • poppy seeds (to taste).

First you need to put the dough. To do this, add a spoonful of sugar and yeast to the milk, mix it and leave it in a warm place for a while, waiting for the dough to begin to rise.

Beat eggs with sugar, salt and vanilla in a separate container. Pour the whipped mixture into the risen dough, add flour and mix well. It is important to get a soft dough. Finally, pour in the melted butter. After this, leave the dough to ferment for an hour.

Divide the doubled dough into 2 equal parts, roll each into a rectangle shape. Sprinkle the sheets with sugar and roll into rolls. Cut them into pieces of 2 cm each, and then form them into buns, pinching the bottom part.

Place them on a baking tray covered with baking paper. Brush the surface of each with beaten egg, sprinkle with poppy seeds and sugar. Let them stand for 15 minutes. Bake the buns in an oven preheated to 200 degrees for 35 minutes.

After this, transfer the finished buns to a tray and cover with a towel. After 15 minutes, the rosy rolls can be served.

Chocolate muffins

Not everyone knows that chocolate muffins can be made from sour milk!

To prepare you will need:

  • 250 ml sour milk;
  • 300 grams of wheat flour;
  • 80 grams of cocoa powder;
  • 1 teaspoon baking powder;
  • 0.5 teaspoon of soda;
  • a pinch of salt;
  • 100 grams of butter;
  • 2 chicken eggs;
  • 200 grams of dark chocolate.

You need to prepare muffin tins in advance and turn on the oven, which should warm up to 200 degrees, because you won’t have to let the dough rest, you need to bake it right away.

Break the chocolate into small pieces so that you can taste them in the finished cupcakes. In this case, 50 grams of chocolate should be set aside separately.

Mix eggs with sugar. Pour melted butter into them, and then sour milk and carefully mix the whole mass without whipping.

Sift the flour and mix with cocoa, salt, soda and baking powder. Pour the liquid ingredients into the container with flour and mix gently with a spoon.

The whole secret of cooking is not to stir the dough too intensely. Mixing slowly will help keep the large holes in the muffins and give them an airy texture, a crispy crust, and a tall top.

After 15-20 movements with a spoon, immediately pour the dough into the molds, filling them completely. Sprinkle with chocolate, which was set aside separately. Bake for 20 minutes. You can check readiness with a toothpick: after piercing the muffins, it should remain dry.

Donuts

For 8 servings of golden brown donuts you will need:

  • a glass of sour milk;
  • 3 cups flour;
  • 100 grams of sugar;
  • 1-2 chicken eggs;
  • 1 teaspoon of soda;
  • a pinch of salt;
  • 0.5 cups vegetable oil.

Pour milk into a deep bowl, break eggs into it, add salt, sugar, butter and beat thoroughly. Sift the flour along with the soda, knead the dough first with a spoon, and as you add flour with your hands. The dough should be elastic and not stick to your hands. It should be wrapped in a bag or covered with a towel and left for 30 minutes.

Roll out the dough into one or two layers. They should be small in thickness, about 1 cm, this is important because this way they will fry well. Cut out circles from the dough using a mug, and in the center of each circle, cut out a circle of smaller diameter using a glass.

Heat a deep frying pan, pouring a large amount of oil into it, so that the donuts can float in it. Place donuts in hot oil and fry on both sides. Place the finished donuts on napkins to remove excess fat. Sprinkle the tops of the warm donuts generously with powdered sugar.

Pie with berries

To prepare the pie you will need:

  • 1 cup of sugar;
  • 1 glass of sour milk;
  • 2 eggs;
  • 1.5 cups flour;
  • 50 grams of vanilla sugar;
  • 1 teaspoon of soda;
  • 2 teaspoons of powdered sugar;
  • 1 cup summer berries.

Beat eggs with sugar. Add milk, soda, vanilla and flour to them, and stir thoroughly. You should have the consistency of liquid sour cream.

You need to place the berries on the bottom of the baking dish, after greasing it with butter. Pour the dough over the berries and place in an oven preheated to 200 degrees for 30-40 minutes.

Berry chilli

To prepare 4 servings of the drink you will need:

  • 300 grams of any summer berries or fruits;
  • 1 liter of sour milk;
  • 250 ml sour cream;
  • 100 grams of sugar.

Cake. What you need: two cups of flour, 2/3 cup of sugar, a glass of sour milk, one egg, half a glass of vegetable oil, a tablespoon of cocoa, one teaspoon of soda, quenched with vinegar, vanillin, nuts, raisins to taste. Beat the egg with sugar, add milk and butter. Gradually add flour, soda, cocoa, vanillin, raisins, nuts (crushed). Bake for about forty minutes. Another cute cupcake. What you need: a glass of sour milk, a glass of not very sweet jam, one egg, half a teaspoon of soda, two glasses of flour. Mix everything, the dough should not be stiff. Bake for about half an hour. You can soak it in sour cream by cutting it lengthwise when it cools down.

Cupcake with filling. What you need: three glasses of sour milk (or kefir), two glasses of sugar, one glass of semolina, three glasses of flour, four eggs, half a teaspoon of soda. You can take different fillings, depending on what you like - pitted cherries, crushed nuts, pitted raisins, dried apricots, pineapple pieces, apples, plums. All ingredients are mixed with a fork and placed in the oven for about an hour. You can pour milk over the semolina in advance to make it swell a little and bake better.

Baking, of course, is the most common use for sour milk. But it’s not difficult to actually cook a whole meal out of it. This is especially nice to do in the heat.

Soups with sour milk.

Bulgarian soup - tarator. What you need: one and a half liters of sour milk, half a kilo of cucumbers, a teaspoon of salt and red pepper, four cloves of garlic, 125 grams of vegetable oil, a bunch of dill, chopped nuts to taste. Add salt, pepper and crushed garlic to the milk. Continuing to stir the mixture, add oil, finely chopped cucumbers and dill. Place in the refrigerator for three hours. Sprinkle with nuts before eating.

Soup with cabbage. What you need: a small head of cabbage, three eggs, salt, pepper, sour milk to taste - about half a glass for two liters of soup. Chop the cabbage and fry in a saucepan with a thick bottom. Pour water, after boiling, pour the egg mixture into the soup, add salt and pepper. Bring to a boil, turn off and only then pour in the milk. When serving, you can sprinkle with crackers and season with sour cream.

Salad with sour milk.

Tomato salad. What you need: one liter of sour milk, one kilogram of tomatoes, two hundred grams of horseradish (you can take ready-made store-bought), lettuce leaves, a bunch of parsley, a bunch of basil.
